Love, Love, Love. Thanks and Meringues.

Well, what an amazing night tonight. Thank you, thank you, thank you. We love having Tenx9 as part of Belfast Pride. Make sure to check their website out and join in the rest of their activities this week. We heard stories of bisexual bullocks, reunions with families, first year anniversaries, meringues, flatulence, five year anniversaries, (the flatulence and the meringues were unrelated), unexpected meetings, Schrodinger's cat and under-the-stairs closets. 

Thanks to Clare and Kathleen, Walker, Louise, Emer, Conor, Paul and Susan. 

Susan kindly shared her recipe for meringues, which was such a wonderful story of love, dedication and mathematics:

60 grams of caster sugar per large egg. (3 eggs make approx 2 dozen meringues).
Whip up the egg whites and add the sugar in spoonfuls between the soft and stiff peak stage.
Add a teaspoonful of acid (that can be vinegar, lemon juice or cream of tartare).
Spoon evenly sized dollops onto a baking tray covered in greaseproof paper. 
Bake at 120 C for exactly 55 mins.
The perfect meringue is a beautiful thing.
